Summer is my favourite seasons right after Spring and it always feels like passing by with the blink of an eye. That’s why I’m holding on to the warm season with dear life every year before Fall rolls around. And what better way to do so than with a sweet treat that screams Summer.
Watermelon meets Cardamon in this dessert, perfect for the hot season. You may think, cardamom ähm what? But these two flavours go heavenly well together. The slightly minty tasting cardamom gives the sweet watermelon an exciting twist you don’t want to miss.
Tips for making this cool and colourful treat
You probably have eaten granita in a restaurant but have you tried it at home? It is easier than you think and will wow your guests. Here are a few prep tips to get the best result:
- Deseed the melon if you want a smooth finish without any crunchy parts. Alternatively, you can press the granita mixture through a sieve after blending to get the kernels out.
- After freezing, scrape the mixture with a fork every hour for the first couple of hours to get the right texture. Then freeze until completely frozen.
- Before serving, cool or even freeze the serving ware. This way, the granita will hold its shape and doesn’t melt away too quickly.

Watermelon Cardamom Granita
Ingredients
- 1 watermelon (~ 1,2kg / 2.6 lb)
- 1 lime
- 1 teaspoon agave nectar
- ¼ teaspoon ground cardamom
Instructions
- Cut off the watermelon rind. Roughly chop and pick out the seeds. Put watermelon chucks into a blender.
- Juice lime and add to blender along with agave nectar and cardamom. Blend until pureed.
- Pour in a container and placein the freezer. Scrape with a fork every hour for the first 2-3 hours to loosen the mixture and get that snowy consistency. Continue to freeze until the desired consistency is reached (~ 5-6 hours).
- Take out the freezer, scrape into bowls or glasses with a fork and serve.
